Okay, so I have to rent a Rug Doctor today to spruce the house up for Thanksgiving. Now, I've never had much luck with these. I think they just get your carpet wet. Is there something I'm forgetting to do?

you are supposed to vacuum it up using the rug doctor....

itll suck up most of the wetness but yeah, itll be a smidge damp for a couple of hours.

my carpet remained wet for about 2 days. I had to have the fans running to assist the drying

It sounds like it's working, but I have yet to notice any real change. Do you ever fight the urge to just use bleach on white carpet and call it a day?
