@jambery Yes, I have that problem too. Because I am lazy. The best way to have pie if you are lazy is to have someone else make it, or to bake a fruit crumble. It's stone fruit season now, so chop up a few peaches or plumbs, rub some sugar and butter and flour together and drop it on top, ignore the dishes while it bakes. I have a dilemma. Grad school starts for me at the end of August, with the first week ending Sep. 2 (no Friday classes). I'm going to guess there will be some cohort bonding over booze after class. Should I do that, or should I go see Lady Gaga?

@Muppy Gaga, for sure. You'll have plenty of time to bond with the other students, trust me. I almost wish I had done less of it, since I now realize most of my classmates were nuts. @emily Ah yes, I just saw your thread. I'll note you privately. But for now, you sound like you could use a comforting pie. I recommend you keep up your strength with a chicken pot pie. Warmth and comfort are what's needed now.

You can't go wrong with Ina Garten, but if you feel lazy it's okay to replace a homemade crust with store bought puff pastry.

@Little p You know, for inner peace and tranquility I usually prescribe baking bread instead of pies. There's something meditative in kneeding dough and waiting for the yeast to awaken and breathe.

@FiZ Gosh, yours is hard. Recipes I can do - gallery space is a little beyond me. Well, I do have a second hand contact at a coffee shop in San Francisco, but that's it. What I do have is a great recipe for a bite sized pie that looks great on a open house reception table, and it's brightly colored for good photographs. Your pie is mini fruit tarts. Dress them up or down, as you like, and keep on being happy.

@hoyden Hello sweetling. Boy, you sound like you can use some love from home. Now my first instinct is to prescribe you a good old fashioned American apple pie with a cheddar cheese crust, but then I remembered how expensive fruit is in Japan. So here's a very American pie that you might not have heard of. It's called a lemon chess. The ingredients are pretty much eggs and butter and sugar and a lemon, which you can get for a few bucks. Plus, it's easy and really really tasty - trust me.

@emily Aargh. Sorry about that. Might I suggest you substitute portabella mushrooms for the meat and veggie stock for the chicken - it'll be even better.

@Skanko There is only one pie that works to satisfy my cravings, and it's Cherry. Canned filling won't do - you need to use real sour cherries which are hard to find anywhere except for Washington in August. Still, it's so wonderful this pie is worth waiting for.
