in iPhoto you can *i think* do a file / export and change the dimensions there.
you can also do it in preview hit up the tools / adjust size menu
you can also do it with automator if you have a ton of photos that need resizing to the same dimensions. that's a bit tricky, however. I can send a script if you need one.
