So there is a woman who comes into the restaurant from time to time and usually gets the same thing. One night she came in really late, 15 til close, and started asking me what else she could have. Nobody in the kitchen knew. The manager was this lame woman, who has since been fired, and she was clueless. I tried to go down the menu with her but I was so uncertain about certain things. Did the soup use a Flour based thickener? Was there bread of some sort in the enchilada chicken mix? It was wretched.

I cut wheat out of my diet, and during that time cooked or made things for celiacs on a bunch of occasions. I couldn't give you a "do it" or "don't do it", but if you decide to do it and want some tips, note me.

I've since added it back into my diet, but it was still a pretty enlightening self-experiment.

I also cut wheat and gluten for some time out of my diet. Though I do eat it now as it's not an allergen to me, I still look for substitutes such as other grains! I've tried a variety of cleanses, experimented with foods, etc.

What should go here?
