@pepper - I once threw a latke party where I had guests who were either a)vegan, b) celiac, c) allergic to POTATOES! and I got them all fed. You can make them without, for sure. Try pre-cooking the potato partway to bring out the starches first, or frying pre-mashed potatoes instead of raw grated. They work well eggless.
I've bought tons of chocolate in preparation. My girlfriend is already getting her kitchen ready for latke making.
I'm trying to figure out how to square the diet I'm on with the "foods fried in oil" tradition.
