Anyone got any cooking type tips, im kinda new to forign foods.

this isn't how my mom makes them, so I'm not used to the casserole-esque version of this dish. my mom heats up the sauce and some oil, dips the tortilla in it to soak it, then fills it with cheese. that's how we roll.

@WordNerd: That's how my friend's mom makes them at home and in her restaurant. I like shredded chicken in my enchiladas, personally.

well we went for the kit version, yay old-el-paso, and we added bacon too, was just after some tips for next time :o)

@WordNerd - think its an Eddie Izzard quote, the one about all mexican food is good, just the names depend on how you fold it.
